Solid Rock Cho'Sen

Inspired by and working closely with a local restaurateur friend, we set out to brew a beer that would pair well with sushi. After numerous tweaks, changes and iterations, a final version came through – a “chosen” beer among many. We decided to call it Cho’Sen. The challenge was to create a beer light in color that not only prepares the palate for the next delicate piece of sushi but also has a flavor profile that stands on its own. Tough to categorize this one though; the Light Hybrid Ale is a space that includes such beers as cream ale, blonde ale or Kolsch. Cho’Sen would likely be considered a hybrid, but does not fit within the designs of any specific style within that category. It is its own unique creature, can’t put it in a box (that’s why it’s on draught!)
