Hop3Star is a Double Mango IPA. The malt bill includes Pilsner, munich, crytstal, rye, biscuit and flaked barley. Eight hop additions during the boil include: Zythos, Simcoe, Columbus, Hallertau, Cascade, Goldings, Amarillo and Centennial. A total of 118lbs of hops went into the kettle. We brewed two 25 barrel batches, the last runnings from the first batch were used as the base water for the second batch to naturally increase the gravity. We added Belgian candy sugar to the kettle also, to increase the starting gravity. 40lbs of fresh mango were added to the kettle to provide the subtle mango character. After primary fermentation it was dry hopped twice, with Amarillo, Simcoe, Centennial, Columbus and cascade. 33lbs of hops were used in the dry hopping. The starting gravity was 22 degrees plato, final gravity is 3.8 degrees plato. It is 10.1% abv, 150 IBUs and 300 calories/12 oz. It’s one of the craziest beers I’ve ever had the privilege to make.
