Before the partners began developing The Noble Pig concept, David heard about a pub in New York City called The Spotted Pig. It has now received its fifth Michelin One Star rating and supposedly is the only pub with such a rating in the world. This impressed him so much that he wanted a pub which would aspire to such standards. As a result, the partners chose to name their establishment a “Pig” and added “Noble” to indicate their desire for higher standards than a run of the mill pub. Hence The Noble Pig was born.
