Join us for our Cidermaker Dinner Series, wherein notable cidermakers showcase their ciders in an intimate setting, while Wassail chefs Joseph Buenconsejo and Rebecca Eichenbaum highlight the extraordinary pairing potential of their ciders with a four course seasonal menu.
Next up is Kevin Zielinski from E.Z. Orchards based in Willamette Valley, Oregon. His family has been orcharding since 1929, and they make some of the most celebrated ciders in America.
Made from French, English, and Early American apple varieties, their juice is fermented in the traditional French method requiring diligent care of the fruit prior to harvest. Their process of fermentation, pétillant naturel, results in fine bubbles and well-developed aromatics. Among the first in the US to try his hand at natural fermentation and the mysterious French process of keeving, Kevin’s ciders are unique, robust, and makes one excitedly wonder – “how did an apple do that?”
In addition to pouring Kevin’s flagship ciders this evening, we will also be serving his small batch pommeau.
