Rochelt Eau De Vie Apricot Eau De Vie 2014

Eau De Vie means water of life. It refers to a spirit distilled from fruit, and Rochelt is known as one of, if not the most respected producers in the world. After a careful double distillation to 71% abv in copper pot stills, the eau de vie is rested in open, fifty liter demijohns for over seven years, covered only with a piece of linen to allow the spirit to breath and to mature over time and to protect from dust and other particles. At bottling it is reduced to 55% abv with spring water and without any filtration. This demijohn yielded just 127 bottles, from 32 tons of Apricots.
