Blend of 5 English bitter (high tannin) apples with a tart (high acid) apple. The English bitter apples are Major, Kingston Black, Somerset Redstreak, Dabinett, and Chisel Jersey. The tart base apple is Liberty, widely recognized as a great cider apple developed by Cornell University for its disease-resistance and productivity. All apples are certified organic.
