Beer Description
A blend of Saison style ales aged in wine barrels & foudres.
Polycephaly is the rare condition of having two heads. Presenting two distinct blends in partnership with Winking Lizard, Polycephaly IV is a fusion of three mixed fermentation saisons. All 3 were aged in either used wine barrels or custom foudre. The saisons all exhibit distinct lemon forward mixed fermentation character. One of the saison threads was brewed with lemon, orange, and grapefruit peel. A crisp, citrus forward oak aged saison with adequate acidity.
