A blend of sour ales aged in oak barrels.
Polycephaly is the rare condition of having two heads. Presenting two distinct blends in partnership with Winking Lizard, Polycephaly II is a fusion of sour reds and sour browns. Each component ranged from 1 year to 3 years in the barrel. A brought symphony of oak, malt, tart jabs, and a funky back bone formed from the complex blend of wild yeast and bacteria. A balanced interpretation of both east and west Flanders tradition.
