Beer Description
Multiple strains of Brettanomyces impart a subtle barnyard-funk and light sourness while blackberries balance with low-level sweetness and a rich, fruity tone.
Following the centuries-long tradition of Belgian brewers, American Wild Ales employ some form of wild yeast or bacteria in addition to Saccharomyces Cerevisiae for fermentation. Ours is fermented using multiple strains of Brettanomyces to impart a subtle barnyard-funk and a drying sensation to the base beer. Post-fermentation, blackberries are added to balance the beer with low-level sweetness and a rich, fruity tone without being obvious or overstated.
