Beer Description
We brew this 10.5% Imperial Stout once a year and always look forward to sharing it with you in time for the start of the Holidays. We ferment Point of Divergence fully with Italian Red Wine yeast which imparts immense dark fruit and wine notes. We then aged this batch for 1 year in 40% Buffalo Trace Bourbon barrels, 40% Napa Valley Red Wine barrels and 20% second use Spanish Ruby Port barrels that we aged last year’s Double Barrel Aged Point of Divergence in. This highly complex Imperial Stout has layered notes of dark fruit, especially cherry, and significant notes coconut and vanilla imparted from the time spent the bourbon barrels.
