American “Gueuze” style Ale. is a special creation we make, blending both young and mature beer that has been available exclusively at our Barrelworks tasting room. Its complexity evolves over many months of maturation, intricate microbial interactions with oak, infinite patience, and creative blending. Sour Opal offers beautiful wood-derived aromas of coconut, Tahitian vanilla, hints of apricot, along with a dark-toasted nutty oak flavor. Ocean mist and gusts of bright citrus swirl on the palate, anchored by a phenolic and funky foundation. This complexity contributes to a very satisfying, richness, quenching acidity and a rounded mouthfeel.
