Borogove begins with local fruit sourced at peak ripeness—blackberries from Wright’s Farm in Gardiner, NY, and Italian plums from Trinity Farm in Clintondale, NY. These fruits underwent a carbonic maceration and autofermentation before blending and secondary fermentation with dark sour ale that was aged in third-use bourbon barrels
