Beer Description
Raw farmhouse sour with lingonberry. Mashed on pilsner, rye, & oat. Dry hopped w/ whole cone Illinois cascades & centennials. Brewed w/ a rare strain of Lithuanian saison yeast that contains lactobacillus. This yeast have very little phenolic quality outside of a slight earthiness, but what it lacks in phenolics it makes up for in ester. Hugh notes of pineapple skin, guava & orange juice. Using a small amount on lingonberry we paired these tannic little berries to match the rye spiciness in the malt build. A very unconventional holiday saison. prost!
