About the brewery

Nordic Inspired, Midwest grown. Sour ~ Wild ~ Funk. Drawing influence from our Dutch & Scandinavian lineage, we focus our efforts on terroir based brewing; sourcing our grains, yeast, hops, and specialty ingredients from midwest based growers and purveyors. Featuring mostly sour & wild beers, we also continue to produce and experiment with dutch & nordic historical styles, new American saisons, and seasonal dark beers. In collaboration and partnership with Pilot Project Brewing, in the Logan Square neighborhood of Chicago, we will begin production of American sours & saisons that will be available in cans, and on draft, starting in June 2020. We plan to open our first brewery / taproom location in early 2021.
