Shibumi is an experimental cuvée ale. We blended our IPA with our golden sour base, added organic miso paste in the whirlpool, fermented on organic sweet cherries and finished with a cool steep of chamomile.

We source eclectic ingredients produced with integrity to create modern, elegant beer. We design and pilot every recipe in our Brooklyn test kitchen, then brew limited commercial releases at a brewing coöperative in CT.
